Korean Cabbage Soup (Baechu Guk)
Korean miso cabbage soup is a healthy, low-fat food that is rich in nutrients and tasty to boot. You can choose the level of spiciness you prefer.
- Serves: 4 persons
- 1head Napa cabbage (chopped)
- 4cups beef broth
- 4tablespoons Korean soybean paste (daenjang)
- 2teaspoons minced garlic
- 2teaspoons black pepper
- 2scallions (chopped)
Step 1Gather the ingredients.
Step 2In a large pot, add the beef broth and bring it to a simmer. Add the soybean paste (doenjang) and stir to dissolve.
Step 3When it begins to boil, reduce to a simmer, and add cabbage and garlic.
Step 4Cook until cabbage is very tender, about 20 minutes.
Step 5Turn off heat and add black pepper and chopped scallions.
