Zingy grapefruit, prawn, avocado & tamarind salad
Add vibrant colours and fresh flavours to your plate with this blush red grapefruit salad, with prawn, avocado and tamarind. It's a lovely lunch or starter

Ingredients
- 3tbsp sesame oil
- 1tsp tamarind
- 1small garlic clove, crushed
- 3cm piece of ginger, peeled and finely grated
- 3tsp fish sauce
- 1-2 limes, juiced
- 2ripe avocados, stoned, peeled and thinly sliced
- 2red grapefruits, peeled, pith removed, sliced into rounds
- 8radishes, thinly sliced
- 150g cooked king prawns, peeled
- 2tbsp sesame seeds
- ½small bunch of coriander, leaves picked and torn
Instructions
Step 1
Combine the sesame oil, tamarind, garlic, ginger, fish sauce and lime juice. Taste and add more fish sauce if needed, then season to taste.Step 2
Arrange the avocado, grapefruit rounds, radishes and prawns on a serving platter. Drizzle over the dressing and scatter with the sesame seeds and coriander.
