Ingredients
- 1medium zucchini , cut into bite-sized pieces
- 1medium yellow summer squash, cut into bite-sized pieces
- 1medium red bell pepper, cut into bite-sized pieces
- 1medium yellow bell pepper, cut into bite-sized pieces
- 1pound fresh asparagus, cut into bite-sized pieces
- 1red onion, chopped
- 3tablespoons extra virgin olive oil
- 1teaspoon salt
- ½teaspoon freshly ground black pepper

Preheat the oven to 450 F.Step 3
While the oven is preheating, prepare all the vegetables by cutting into bite-sized pieces.Step 4
Then, place the zucchini, squash, bell peppers, asparagus, and red onion in a large roasting pan, and toss with the olive oil, salt, and black pepper.Step 5
Spread vegetables in a single layer in the pan.Step 6
