Country Breakfast Skillet
This hearty breakfast skillet recipe includes eggs, bacon, onion, potatoes, and cheddar cheese. A true farmer-style breakfast that's sure to satisfy.
- Serves: 6 persons
- 6slices bacon (cut into 2-inch pieces)
- ¼cup chopped green bell pepper
- 2tablespoons finely chopped onion
- 6cups cubed cooked potatoes
- ½cup shredded sharp cheddar cheese
- 6eggs (lightly beaten)
- Salt and pepper to taste
Step 1Gather the ingredients.
Step 2In a large, heavy skillet , cook the bacon over moderate heat until crisp.
Step 3Remove the bacon to drain on paper towels.
Step 4Crumble the bacon and set aside.
Step 5Pour off all but 3 tablespoons of bacon drippings from the skillet. Heat these 3 tablespoons of drippings in the pan over medium-high heat until sizzling.
Step 6Add the bell pepper, onion , and potatoes. Cook, stirring gently until the potato cubes are browned.
Step 7Sprinkle the shredded cheese over the mixture and stir until melted.
Step 8Add the beaten eggs and cook, stirring gently, until the eggs are set.
Step 9Season with salt and pepper. Sprinkle the crumbled bacon over the eggs. Serve immediately.
