Chocolate Oaties with Coconut Oil
Soft oatmeal chocolate chip cookies made with coconut oil. You can make these with any kind of baking chips, not just dark chocolate.

Ingredients
- 1cup butter
- 6tablespoons coconut oil
- ¾cup packed brown sugar
- 1tablespoon packed brown sugar
- ½cup white sugar
- 2eggs
- 1teaspoon vanilla extract
- 1½ cups all-purpose flour
- 1teaspoon baking soda
- ¾teaspoon salt
- 3cups quick-cooking oats
- 1cup dark chocolate chips

Preheat the oven to 350 degrees F (175 degrees C).Step 2
Combine butter and coconut oil in a saucepan over medium-low heat; cook until melted, 2 to 3 minutes. Set aside to cool.Step 3
Mix 3/4 cup plus 1 tablespoon brown sugar, white sugar, eggs, and vanilla extract together in a mixing bowl.Step 4
Combine flour, baking soda, and salt in a separate bowl. Add to egg mixture, mixing well. Stir in oats and chocolate chips.Step 5
Roll heaping tablespoonfuls of cookie dough into balls. Place 2 inches apart on ungreased cookie sheets.Step 6
Bake in the preheated oven until edges are set, about 12 minutes. Cool on the cookie sheets for 2 minutes, then transfer to wire cooling racks.
