Crock Pot Swiss Chicken Casserole
This popular 5-ingredient chicken makes a delicious everyday family dinner, and it is super easy to prepare and cook in the slow cooker.
- Serves: 6 persons
- 6boneless skinless chicken breast halves
- 2tablespoons olive oil
- 6slices Swiss cheese
- 1can condensed cream of mushroom soup
- 2cups herb-seasoned stuffing mix
- ½cup butter or margarine, melted
- 4medium yellow potatoes, optional
- Kosher salt
- Freshly ground black pepper
Step 1Gather the ingredients.
Step 2If using potatoes, wash, peel, and slice. Reserve.
Step 3Season chicken breast with salt and pepper.
Step 4Add olive oil to a pan and once hot, brown chicken breast for 4 minutes on each side. Reserve chicken and pan juices.
Step 5Line your crockpot and butter sides and bottom or spray with nonstick cooking spray.
Step 6If you're using potatoes, place at the bottom of the crockpot and sprinkle with salt and pepper. This extra layer will add moisture to the dish and give you a full meal in just one pot.
Step 7Arrange chicken breasts in the bottom of the pot and pour in any juices from pan.
Step 8Top chicken breast with cheese slices.
Step 9Spoon cream of mushroom soup over cheese.
Step 10Sprinkle stuffing crumbs over soup layer.
Step 11Melt butter on stovetop or microwave.
Step 12Drizzle butter on chicken and soup preparation.
Step 13Cook on low for 5 to 7 hours or set it to high for 3 to 3 1/2 hours.
