Crock Pot Swiss Chicken Casserole

Ingredients
- 6boneless skinless chicken breast halves
- 2tablespoons olive oil
- 6slices Swiss cheese
- 1can condensed cream of mushroom soup
- 2cups herb-seasoned stuffing mix
- ½cup butter or margarine, melted
- 4medium yellow potatoes, optional
- Kosher salt
- Freshly ground black pepper

If using potatoes, wash, peel, and slice. Reserve.Step 3
Season chicken breast with salt and pepper.Step 4
Add olive oil to a pan and once hot, brown chicken breast for 4 minutes on each side. Reserve chicken and pan juices.Step 5
Line your crockpot and butter sides and bottom or spray with nonstick cooking spray.Step 6
If you're using potatoes, place at the bottom of the crockpot and sprinkle with salt and pepper. This extra layer will add moisture to the dish and give you a full meal in just one pot.Step 7
Arrange chicken breasts in the bottom of the pot and pour in any juices from pan.Step 8
