Ingredients
- ½cup sugar
- ½cup water
- ½cup freshly squeezed lemon juice
- 2tablespoons peeled and chopped ginger , or chopped fresh mint

Bring all ingredients—sugar, water, lemon juice, and ginger—to a boil over medium-high heat.Step 3
Reduce heat. Stirring often, simmer the mixture for 7 to 10 minutes, or until the mixture has reduced to about half its original volume.Step 4
Filter through a strainer, discarding the gingerroot.Step 5
Store in a clean jar with a tight lid (such as a Mason jar). Refrigerated, this syrup will keep fresh for up to six months.
