Ingredients
- 300 gpotatoes
- 200 gcarrots
- 1onion
- 1garlic clove
- 500 gbeef ragout
- 2 tbspwhite flour
- clarified butter
- ½ tspsalt
- 3 tbspsweet paprika
- 2 tbsptomato puree
- 1 tspsalt
- 1 ½ dlred wine
- 6 dlmeat bouillon
- 1 tincherry tomato
- 1bay leaf
- 4 tbspsour single cream
Instructions
Step 1
Peel the potatoes and carrots, thinly slice the onion, press the garlic cloves.Step 2
Dice the potatoes and carrots.Step 3
Flour the meat.Step 4
Heat the clarified butter in a pan, brown the meat in batches for approx. 5 mins., season with salt, then remove.Step 5
Heat a little clarified butter in the pan. Sauté the onion and garlic for approx. 5 mins.Step 6
Add the potatoes, carrots, paprika, tomato puree and meat to the pan, season with salt and cook briefly.Step 7
Pour in the wine and stock, add the tomatoes along with the juice and bay leaf, bring to the boil. Cover and braise over a low heat for approx. 2 hrs., stirring occasionally. Serve the soup in bowls, top with sour single cream.
