- 3eggs
- Vegetable oil (according to cake mix directions)
- For the Coconut Cream Filling:
- 1(15-ounce) can coconut cream
- 1 ⅓cups milk
- 1pinch salt
- 5egg yolks (reserve the egg whites for meringue)
- 4tablespoons cornstarch
- ½cup sugar
- 1teaspoon vanilla
- 2cups heaving whipping cream
- Optional: 1 cup coconut (shredded sweetened dried)
- For the Syrup:
- ¾cup sugar
- ¾cup water
- 2tablespoons rum
- For the Meringue Topping:
- 1 ½cups sugar
- ½cup water
- 1tablespoon corn syrup
- 5egg whites
- To Garnish:
- Garnish: 1/2 cup shredded sweetened dried coconut (toasted)
- Garnish: cinnamon
