- For the Cake:
- 1cup butter, softened
- ⅓cup light brown sugar
- ½cup sugar
- 4eggs, at room temperature
- 3cups flour
- 1teaspoon baking soda
- 1tablespoon cinnamon
- ½teaspoon ground cloves
- ½teaspoon nutmeg
- ¾teaspoon salt
- 3teaspoons baking powder
- Zest of one orange
- Zest of one lemon
- 1tablespoon strong brewed coffee
- ½cup brandy, pisco, or rum
- ½cup evaporated milk
- 2tablespoons anise-flavor liqueur
- 1tablespoon vinegar
- 1cup nuts, finely chopped
- ½cup dried cherries, finely chopped
- ½cup golden raisins, family chopped
- ½cup raisins, finely chopped
- For the Icing:
- 1cup confectioners' sugar
- 1to 2 tablespoons butter, melted
- Pinch of salt
- ½teaspoon vanilla extract
- 1to 2 tablespoons milk
