- For the Leg of Lamb:
- 6to 8 pounds leg of lamb (trimmed and tied)
- 3to 4 garlic cloves (cut into slivers)
- 2tablespoons olive oil
- 1teaspoons fresh rosemary leaves (finely chopped)
- 2teaspoons Kosher salt
- 2teaspoons freshly ground black pepper
- For the Gravy:
- 3to 4 tablespoons butter (softened)
- 3to 4 tablespoons all-purpose flour
- 4ounces white wine
- 3cups lamb stock (or chicken stock)
- Optional: 1 teaspoon redcurrant jelly
