    Gather the ingredients. Grease and flour a 1-pound coffee can or the insert of a 4-quart crock pot.

    In a large bowl, using an electric mixer, cream together the butter and sugar until fluffy. Add the egg and mix well. Set aside.

    In a small bowl, whisk together the flour, baking powder, and salt.

    Add the whisked dry ingredients, milk, and vanilla extract to the butter-sugar mixture. Beat until well blended.

    Transfer the batter to the coffee can or crock pot insert.

    Set in the crock pot and cover with 2 paper towels.

    With the cover slightly ajar, cook on high for 2 hours or until a toothpick inserted into the center of the cake is clean or has just a few crumbs attached to it.

    Let the coffee can or insert remain in the crock pot heating element for 10 minutes. Then remove the tin or insert to a wire rack to continue cooling for an additional 10 minutes. Unmold, if desired, and cool completely (or serve warm).
