One-Egg Butter Crock Pot Cake
If you only have a few baking supplies and one egg, you can still have dessert. This one-egg butter crock pot cake is a simple, but flavorful cake.
- Serves: 6 persons
- ¼cup butter (softened)
- ½cup sugar
- 1large egg
- 1cup all-purpose flour
- 1 ½teaspoons baking powder
- ¼teaspoon salt
- ¼cup milk
- ½teaspoon vanilla extract (or butter flavoring)
Step 1Gather the ingredients. Grease and flour a 1-pound coffee can or the insert of a 4-quart crock pot.
Step 2In a large bowl, using an electric mixer, cream together the butter and sugar until fluffy. Add the egg and mix well. Set aside.
Step 3In a small bowl, whisk together the flour, baking powder, and salt.
Step 4Add the whisked dry ingredients, milk, and vanilla extract to the butter-sugar mixture. Beat until well blended.
Step 5Transfer the batter to the coffee can or crock pot insert.
Step 6Set in the crock pot and cover with 2 paper towels.
Step 7With the cover slightly ajar, cook on high for 2 hours or until a toothpick inserted into the center of the cake is clean or has just a few crumbs attached to it.
Step 8Let the coffee can or insert remain in the crock pot heating element for 10 minutes. Then remove the tin or insert to a wire rack to continue cooling for an additional 10 minutes. Unmold, if desired, and cool completely (or serve warm).
Step 9Slice cooled cake and serve simply with a dollop of sweetened whipped cream or ice cream, if desired.
