- For the Lobster Filling:

- ¼cup (1.2 ounces) julienned leek (white part only)
- 1clove garlic (minced)
- 2teaspoons dry white wine
- ½pound cooked lobster meat
- ¼cup fresh ricotta cheese
- ½cup (1.3 ounces) shredded fresh mozzarella cheese
- ½cup (3.2 ounces) Alfredo sauce (store-bought or homemade)
- 1 ½teaspoons tomato paste ( doppio concentrato di pomodoro )
- ¼teaspoon fine sea salt
- ¼cup cherry tomatoes (halved)
- For the Ricotta-Mozzarella-Mascarpone Filling:
- ¾cup (2.6 ounces) shredded fresh mozzarella cheese
- ⅓cup (2.8 ounces) fresh ricotta cheese
- 1tablespoon heavy cream
- 1tablespoon (1/2 ounce) mascarpone cheese
- Pinch fine sea salt
- For the Lasagna:
- 1package (8.8 ounces/250 grams/6 sheets) fresh lasagne sheets
- ¼cup (2 ounces) Alfredo sauce (store-bought or homemade)
- ½cup (1.8 ounces) shredded fresh mozzarella cheese
- ¼cup cherry tomatoes (halved)
