Carrot Cake With Dates or Raisins
Try this carrot cake recipe made with grated carrots, nuts, dates or raisins, cinnamon, and other spices.

- 2cups sugar
- 1 ½cups vegetable oil
- 2cups carrots (grated)
- 2teaspoons vanilla
- 3cups flour
- 2teaspoons baking powder
- 2teaspoons baking soda
- 2teaspoons cinnamon
- ¼teaspoon nutmeg
- ⅛teaspoon cloves
- ½teaspoon salt
- ¾cup nuts (chopped)
- ¾cup dates (or raisins, chopped)
Step 1Beat together eggs, sugar, oil, grated carrots, and vanilla.
Step 2Sift together the flour, baking soda, baking powder, salt, and spices; gradually add to carrot mixture and beat to blend well. Fold in chopped nuts and dates or raisins.
Step 3Bake in a greased 10-inch tube pan at 375 F for about 55 to 65 minutes. A wooden pick inserted in the center should come out clean.
Step 4Frost with cream cheese frosting or glaze as desired.
