Vegetarian Wild Rice and Mushroom Pilaf Recipe

Ingredients
- 2 ¾cups vegetable broth
- ½cup wild rice
- ¾cups brown rice
- 1onion (diced)
- 4cloves garlic (minced)
- 2tablespoons olive oil
- 3cups mushrooms (sliced)
- 2celery stalks (sliced)
- ½teaspoon sage
- ½teaspoon marjoram
- Salt and pepper (to taste)
- ⅓cup fresh parsley (chopped)
- ⅓cup almonds (chopped)

Gather the ingredients.Step 2
Bring the vegetable broth to a boil in a large saucepan and add the wild rice. Cook for 15 to 20 minutes, then add brown rice.Step 3
Cover and cook for another 45 minutes or until the rice is fluffy.Step 4
In a large skillet, sauté the onions and garlic in olive oil until onions are brown and caramelized , about 8 to 10 minutes.Step 5
Add the mushrooms, celery, and spices and cook for another 5 minutes, adding more oil or a little bit of broth if needed.Step 6
Add the cooked rice, fresh parsley, and almonds and stir well to combine. Cook for another 1 to 2 minutes until all of the ingredients are just heated through.Step 7
