Blue Cheese and Pine Nut Sauce for Steaks and Chops

Ingredients
- 1tablespoon olive oil or unsalted butter
- 1shallot (finely chopped)
- ½cup red wine
- ¼cup beef broth
- 1tablespoon Worcestershire sauce
- 1teaspoon Dijon mustard
- ½teaspoon fresh thyme
- ½teaspoon fresh ground black pepper
- ½teaspoon chili powder
- Optional: pinch of salt
- ⅓cup blue cheese (crumbled)
- ¼cup pine nuts

Heat olive oil or butter in a large saucepan.Step 3
Add shallot and cook for 2 minutes, or until translucent.Step 4
Add wine, beef broth, and Worcestershire sauce. Bring to a boil and reduce heat to low.Step 5
Stir in mustard and remaining seasonings. Simmer for 8 to 10 minutes.Step 6
As the sauce begins to reduce, add blue cheese and melt through.Step 7
Remove from heat and stir in pine nuts.Step 8
