Blue Cheese and Pine Nut Sauce for Steaks and Chops
This sauce pairs well with grilled steak, beef roast, and pork chops. It's also perfect for the holidays.
- Serves: 4 persons
- 1tablespoon olive oil or unsalted butter
- 1shallot (finely chopped)
- ½cup red wine
- ¼cup beef broth
- 1tablespoon Worcestershire sauce
- 1teaspoon Dijon mustard
- ½teaspoon fresh thyme
- ½teaspoon fresh ground black pepper
- ½teaspoon chili powder
- Optional: pinch of salt
- ⅓cup blue cheese (crumbled)
- ¼cup pine nuts
Step 1Gather the ingredients.
Step 2Heat olive oil or butter in a large saucepan.
Step 3Add shallot and cook for 2 minutes, or until translucent.
Step 4Add wine, beef broth, and Worcestershire sauce. Bring to a boil and reduce heat to low.
Step 5Stir in mustard and remaining seasonings. Simmer for 8 to 10 minutes.
Step 6As the sauce begins to reduce, add blue cheese and melt through.
Step 7Remove from heat and stir in pine nuts.
Step 8Serve over grilled or roasted meat of your choice. Enjoy!
