Prepare this guacamole just before serving so it's super fresh. You can serve the guacamole with an avocado stone in the centre to add an extra Mexican touch
- Serves: 4 persons
- 3ripe Hass avocados
- 1plum tomato, finely chopped
- ½small onion, finely chopped
- 20g coriander, chopped
- 1tbsp extra virgin olive oil
- 1⁄2 -1 lime
- tortilla chips, to serve (gluten-free, if needed)
Step 1Halve the avocados, then remove their stones, setting one aside. Scoop the flesh into a bowl.
Step 2Mash the avocados using a potato masher, leaving some chunks to add texture. Stir through the chopped tomato, onion and coriander, and season to taste with plenty of salt and black pepper. Stir in the oil and lime juice, to taste. Mix well and serve immediately with tortilla chips for scooping it up.
