Classic Kosher Potato Kugel Recipe (Pareve)

- 8medium potatoes
- 2onions
- 6large eggs
- ½cup vegetable oil
- 4tablespoons all-purpose flour
- 1heaping tablespoon salt
- ½to 1 teaspoon pepper
- Sour cream, for optional garnish
- Chives , for optional garnish

Heat the oven to 400 F / 200 C. Oil a 13 x 9 x 2-inch baking dish.Step 3
Using a box grater or food processor fitted with a shredding disc, coarsely grate the potatoes and onions.Step 4
Let stand for 3 to 5 minutes, then place in a colander or clean tea towel and squeeze out any excess liquid.Step 5
In a large bowl, beat together the eggs, oil, flour, salt, and pepper. Set aside.Step 6
Add the grated potatoes and onions to the egg-flour mixture. Mix with a large spoon just until smooth.Step 7
Pour the kugel batter into the prepared baking dish and smooth the top with a spatula.Step 8
Bake the kugel, uncovered, in the heated oven for 1 hour, or until golden brown on top. When the kugel is done, a knife inserted in the center should come out clean.Step 9
