Honey-Ginger Switchel

Ingredients
- ¼cup ginger (sliced or chopped)
- 3to 4 cups water (filtered or distilled; divided)
- 2tablespoons apple cider vinegar
- 2tablespoons honey (to taste)
- 2tablespoons lemon juice (fresh, to taste)

Peel and chop or slice the gingerroot. When using organic ginger, there's no need to peel it; the peel has most of the root's nutrients. If you choose to leave the peel, be sure to scrub it thoroughly under running water.Step 3
In a small saucepan, bring 1 cup of water to a boil. Add the ginger. Remove from heat and let steep for at least 10 minutes, or until completely cool.Step 4
Pour the ginger water and ginger into a 1-quart jar along with the remaining water. Add the honey, apple cider vinegar, and the juice of half a lemon .Step 5
Secure the lid, shake well, and store in the refrigerator overnight.Step 6
Measure out about 1/2 to 1 cup of switchel to drink each day. Serve it cold or over ice, and enjoy.
