Gooey Vegan Chocolate Chip Cookies
These cookies are moist and delicious and also happen to be vegan!

Ingredients
- ¾cup coconut oil
 - ¾cup white sugar
 - ¾cup brown sugar
 - ½cup unsweetened applesauce
 - 1teaspoon vanilla extract
 - 2½ cups all-purpose flour
 - ¼cup cocoa powder
 - 1teaspoon baking powder
 - ½teaspoon salt
 - ⅔cup vegan white chocolate chips

Step 1
Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.Step 2
Cream together coconut oil, white sugar, and brown sugar in a bowl using an electric mixer. Gradually add applesauce and mix to combine. Blend in vanilla extract.Step 3
Combine flour, cocoa powder, baking powder, and salt in a bowl. Gradually add flour mixture to the bowl with the coconut oil mixture and mix until batter is smooth. Fold in white chocolate chips.Step 4
Roll dough out into 2-inch balls and place onto the prepared baking sheet.Step 5
Bake cookies in the preheated oven until edges are crispy, about 12 minutes.
