Vegan No Bake Cookies
This quick and easy no-bake cookie is prepared with three of our favorite vegan cookie ingredients: chocolate, oats, and peanut butter.

Ingredients
- 2cups white sugar
- ½cup coconut milk
- ½cup peanut butter
- ¼cup dairy-free chocolate chips
- 3tablespoon dairy-free soy margarine
- 2tablespoon cocoa powder
- 3cups rolled oats

Gather the ingredients.Step 2
Line a large baking sheet with wax paper or parchment. Set aside.Step 3
In a medium-sized saucepan over medium heat, combine the sugar, coconut milk, peanut butter, chocolate chips, margarine, and cocoa powder, stirring to combine.Step 4
Bring the mixture to a rolling boil and boil for exactly 2 minutes without stirring.Step 5
Remove from the heat and stir in the oats until evenly distributed.Step 6
Drop the mixture onto the prepared sheet by the spoonful and let cool completely before serving. This will take about 15 minutes or longer.Step 7
