Sweet Potato Rolls
These yummy sweet potato rolls are easy to prepare in the bread machine, then you just shape, arrange in a baking pan, and pop them in the oven.

Ingredients
- 2medium sweet potatoes (1 cup, mashed)
- ¾cup milk
- 3tablespoons butter (melted, plus extra to top rolls out of the oven)
- 1large egg (beaten)
- 4cups all-purpose flour ( 18 ounces )
- 4tablespoons sugar
- 1teaspoon salt
- 2 ¼teaspoons active dry yeast

Gather the ingredients.Step 2
Peel 2 medium sweet potatoes and cut them into cubes.Step 3
Bring a pot of salted water to a boil over high heat.Step 4
Add the sweet potato cubes to the boiling water and reduce the heat to low. Cover the pan and cook for about 20 minutes, or until tender.Step 5
Drain well and mash. Cool completely and measure 1 cup for the recipe.Step 6
Add all ingredients to the bread machine in the order suggested by the manufacturer.Step 7
Use the basic dough cycle. When the cycle finishes, divide the dough into 16 to 20 uniform pieces and shape them into balls. Place the dough balls in a greased 9-inch square baking pan, so they're just touching but not too close.Step 8
Cover the rolls with a cloth and let rise for about 45 minutes in a warm, draft-free place. Preheat oven to 375 F.Step 9
Bake in the oven for about 20 to 23 minutes, until nicely browned.Step 10
Brush the tops with melted or softened butter while they're hot.Step 11
