Fabulous Five Spice Chicken
This dish is great on the BBQ or cooked in the broiler at home. The secret is the fresh ginger, star anise, and a touch of sherry.
- Serves: 4 persons
- 3tablespoons soy sauce
- 3tablespoons vegetable oil
- 2tablespoons sherry
- 6cloves garlic
- 2tablespoons fresh ginger
- 2tablespoons Chinese five-spice powder
- 1serrano pepper
- 2tablespoons brown sugar
- ½teaspoon ground anise seed
- ½teaspoon salt
- 2pounds bone-in chicken parts
Step 1In a blender or food processor, blend the soy sauce, oil, sherry, shallots, garlic, ginger, Chinese five-spice powder, serrano pepper, brown sugar, anise, and salt until smooth. Place the chicken in a large bowl. Pour the blended mixture over the chicken, cover, and marinate at least 1 hour in the refrigerator.
Step 2Preheat grill for high heat.
Step 3Lightly oil the grill grate. Discard marinade. Place chicken on the grill, and cook 10 minutes on each side, or until juices run clear.
