Basic Roasted Potatoes
These simple roasted potatoes are easy to prepare and they make a delicious side dish for breakfast or just about any meat, poultry, or fish entree.

Ingredients
- 2to 2 1/2 pounds red-skinned potatoes (unpeeled, scrubbed, and cut in 1 to 1 1/2-inch pieces)
- ¼cup olive oil
- ¾teaspoon kosher salt
- ½teaspoon freshly ground black pepper
- Optional: 3 cloves garlic (finely minced)
- 1tablespoon fresh parsley (minced)

Heat the oven to 400 F.Step 3
In a large bowl, toss the potato chunks with the olive oil, kosher salt, black pepper, garlic (if using), and parsley.Step 4
Spread the potatoes out in a single layer in a large, shallow rimmed baking pan, such as a large jelly roll pan or half sheet pan.Step 5
Roast the potatoes for about 50 to 60 minutes, or until nicely browned, turning every 15 to 20 minutes to brown evenly.Step 6
