NYC style falafel sandwich stuffed with pickled vegetables, herbs, yogurt, and a garlic lemon tahini dressing.

Ingredients
- For the Falafel: (makes more than the recipe requires)
- 1(15-ounce) can chickpeas (drained and rinsed)
- 1handful parsley
- 1handful cilantro
- 2garlic cloves
- ½onion, chopped
- ½tbsp. cumin
- juice from half lemon
- 1tbsp. flour
- 1tsp. salt
- 1pinch red pepper flakes
- 1bottle vegetable oil for frying
- For the Garlic Lemon Tahini Dressing: (makes more than the recipe requires)
- 2tbsp. tahini
- ½clove garlic (finely chopped)
- ½tbsp. olive oil
- ½tbsp. parsley (chopped)
- juice from 1/4 lemon (or more)
- ½tbsp. water to adjust the thickness
- For the Sandwich:
- 1pita (warmed)
- 1tbsp. red onion (chopped)
- 1tbsp. carrot matchsticks
- 1tbsp. cucumber (chopped)
- 1tbsp. tomato (chopped)
- 1tbsp. pickled beets (chopped)
- 1tbsp. garlic pickles (chopped)
- 1tbsp. chickpeas
- 1pinch fresh parsley (chopped)
- 1pinch fresh dill (chopped)
- 1splash red wine vinegar
- 1tbsp. plain greek yogurt
- 4falafel balls
- 2tbsp. garlic lemon tahini dressing
- Optional: your favorite hot sauce
