Mexican-Style Shrimp Ceviche

Ingredients
- For the Shrimp and Sauce:
- 4tablespoons freshly squeezed lime juice, from 4 limes
- 2teaspoons kosher salt, plus more to taste
- 1pound small shrimp, peeled, deveined
- 1cup Clamato, or other tomato-clam juice
- ½cup ketchup
- ¼cup hot sauce
- ¼cup olive oil
- For the Ceviche:
- ¼cup chopped onion, soaked in cold water for 5 minutes, drained
- ¼cup chopped cucumber
- 1medium tomato, seeded and diced (about 1/2 cup)
- 1avocado, chopped
- 1tablespoon fresh cilantro , chopped
- Tortilla chips, for serving
