Gobble Gobble Chili with Chipotle Baja Sauce
This is a wonderful low-fat zesty turkey chili finished with a fat-free Cheddar cheese and Greek yogurt Baja sauce. Serve with your favorite cornbread recipe.

Ingredients
- 1pound ground turkey
- 1green bell pepper, chopped
- 1onion, chopped
- 3stalks celery, chopped
- 2(15 ounce) cans spicy chili beans
- 2(14.5 ounce) cans diced chili-style tomatoes
- 1(15 ounce) can tomato sauce
- 1(12 fluid ounce) can or bottle beer
- 1chipotle chile in adobo sauce, chopped
- 1teaspoon ground cumin
- 1teaspoon ground black pepper
- ½cup plain Greek yogurt
- ⅓cup mayonnaise
- 2tablespoons lime juice
- 2cloves garlic
- 1chipotle chile in adobo sauce, chopped
- 1(8 ounce) package shredded reduced-fat Cheddar cheese
Instructions
Step 1
Heat a large skillet over medium-high heat and stir in the ground turkey. Cook and stir until the turkey is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Add bell pepper, onion, and celery. Continue to cook and stir until vegetables are tender, 5 to 10 minutes.Step 2
Stir chili beans, tomatoes, tomato sauce, beer, 1 chopped chipotle chile, cumin, and black pepper into turkey mixture; simmer for 2 hours.Step 3
Place Greek yogurt, mayonnaise, lime juice, garlic, and remaining 1 chopped chipotle chile in a food processor or blender; pulse until mixture is smooth. Refrigerate sauce until ready to use.Step 4
Scoop chili into bowls; sprinkle with Cheddar cheese and drizzle with yogurt sauce.
