Caribbean Red Beans and Rice
A vegetarian recipe for Caribbean-style red beans and rice simmered and spiced with garlic, nutmeg, and cinnamon for a healthy meal.

Ingredients
- 1onion, diced
- 3cloves garlic, minced
- 1tablespoon olive oil
- ½teaspoon ground nutmeg
- ½teaspoon ground cinnamon
- ½teaspoon ground cloves
- 1(12-ounce) can kidney beans
- 1(14-ounce) can tomatoes
- 1 ½cups rice
- 1 ½cup water or vegetable broth

Gather the ingredients.Step 2
In a large skillet, sauté onion and garlic in olive oil until onions turn soft, about 3 to 5 minutes. Add in nutmeg, cinnamon, and cloves, and allow to cook for just one more minute, stirring occasionally to prevent spices from burning.Step 3
Add kidney beans and tomatoes, including liquid from each (do not drain). Give it all a quick stir to combine everything together well.Step 4
Allow to cook for a few more minutes, then add rice and water or vegetable broth.Step 5
Cover skillet and allow to cook for about 30 to 35 minutes, or until rice is done and most of the liquid has been absorbed. Throughout cooking time, stir rice occasionally to make sure it doesn't stick to the bottom of the pan.Step 6
Add salt and pepper to taste.
