Classic Shrimp Scampi Recipe
This classic and delicious garlic shrimp recipe is named for Gilroy, California, known as the garlic capital of the world.
- Serves: 4 persons
- 24large shrimp , peeled and deveined
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 2tablespoons olive oil
- 6garlic cloves, finely minced
- ¼cup dry white wine, optional
- 2tablespoons cold butter
- ¼cup chopped flat-leaf parsley
- 2teaspoons chopped fresh oregano, optional
- ½lemon, juiced
Step 1Gather the ingredients.
Step 2Pat the shrimp dry with paper towels. Season with salt and freshly ground black pepper to taste.
Step 3Place a large skillet over high heat, and add the olive oil.
Step 4When the oil is very hot, add the shrimp and sauté on high heat for 1 to 2 minutes, or until the shrimp are about halfway cooked.
Step 5Add the garlic, and sauté for 1 minute.
Step 6Add the wine, if using, and let simmer until reduced by half.
Step 7Add the cold butter, reduce the heat to medium, and cook for another minute, or until the shrimp are cooked through.
Step 8Turn off the heat and stir in the parsley, oregano if using, and lemon juice. Serve immediately.
