Classic Shrimp Scampi Recipe

Ingredients
- 24large shrimp , peeled and deveined
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 2tablespoons olive oil
- 6garlic cloves, finely minced
- ¼cup dry white wine, optional
- 2tablespoons cold butter
- ¼cup chopped flat-leaf parsley
- 2teaspoons chopped fresh oregano, optional
- ½lemon, juiced

Gather the ingredients.Step 2
Pat the shrimp dry with paper towels. Season with salt and freshly ground black pepper to taste.Step 3
Place a large skillet over high heat, and add the olive oil.Step 4
When the oil is very hot, add the shrimp and sauté on high heat for 1 to 2 minutes, or until the shrimp are about halfway cooked.Step 5
Add the garlic, and sauté for 1 minute.Step 6
Add the wine, if using, and let simmer until reduced by half.Step 7
Add the cold butter, reduce the heat to medium, and cook for another minute, or until the shrimp are cooked through.Step 8
Turn off the heat and stir in the parsley, oregano if using, and lemon juice. Serve immediately.
