Vegan Chocolate Oatmeal Cookies
Long gone are the vegan baking woes, these taste better than any dairy cookies. With a cup of chai tea in the morning they make the sweetest, most delicious breakfast. They're also a healthy snack or dessert. Go vegan!

Ingredients
- 2cups all-purpose flour
- 1¼ cups brown sugar
- ½cup white sugar
- 3(1.23 ounce) packages instant apple-cinnamon oatmeal
- 1teaspoon salt
- 1teaspoon baking powder
- 1teaspoon ground cinnamon
- ½teaspoon ground nutmeg
- 1cup chopped walnuts, or to taste
- ½cup raisins, or to taste
- 1medium banana
- ¼cup unsweetened cocoa powder
- ¼cup chocolate-flavored almond milk
- ¾cup vegan margarine
- ½cup orange juice
- 1tablespoon vanilla extract
- 1tablespoon molasses

Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a cookie sheet.Step 2
Sift flour, brown sugar, sugar, instant oatmeal, salt, baking powder, cinnamon, and nutmeg. Stir in walnuts and raisins.Step 3
Combine banana, cocoa, and almond milk in a food processor; process until pureed. Transfer to a bowl and mix in vegan margarine, orange juice, vanilla, and molasses until combined. Pour into the dry mixture and mix with a spatula to combine. Roll dough into 1-inch balls and place 2 inches apart on the prepared cookie sheet.Step 4
Bake in the preheated oven until browned but not hardened, about 12 minutes. Cool on the baking sheet for 2 to 4 minutes before removing to a wire rack. Serve warm.
